Pumpkin Chia Seed Pudding
Chia Seed Pudding
Ingredients
1 cup unsweetened almond or oat milk
1 cup coconut yogurt
1/2 cup canned pumpkin
1/4 cup slightly heaped chia seeds
1 teaspoon pumpkin spice
1 Tablespoon vanilla extract
Pinch of salt
Whisk all the ingredients together until smooth. Place in fridge overnight.
Apples with ‘Caramel’ Sauce
Ingredients
2 apples
1/2 lemon
3 Tablespoons raw almond butter
1/4 cup maple syrup
1 teaspoon almond extract
Putting It Together
Just before serving, remove the seeds and dice the apples
Squeeze the juice of 1/2 lemon over the apples.
Mix almond butter, almond extract, and maple syrup until smooth
Pour mixture over apples, covering the apples with the sauce.
In glass dessert bowls, add a heaped 1/2 cup of the pumpkin chia seed pudding and top with 1/4 cup of the ‘caramel’ apples. Sprinkle with toasted coconut or chopped walnuts or pecans.
