Fig and Sweet Potato Salad
This delicious side dish/salad is bursting with flavors!
Ingredients:
3 medium sweet potatoes, chopped
1 cup goat or feta cheese, crumbled
8 spring onions, saute´
2 garlic cloves, chopped
1 red chili, sliced thin and most seeds removed
2-3 Tbsp avocado oil
4 figs, cut in quarters
1/2 cup parsley, finely chopped
1/2 of a fresh lime
Balsamic glaze to taste
Putting it Together:
Oven roast sweet potatoes until cooked through
Crumble about a cup of cheese (goat or feta) onto the sweet potatoes
Sauté 8 spring onions, 2 garlic cloves, and a sliced red chili (Most seeds removed), in 2-3 tablespoons avocado oil.
Pour saute´ mixture over the sweet potatoes and cheese, arrange figs over everything, and sprinkle 1/2 a cup of finely chopped parsley, a large squeeze of fresh lime, and a drizzle of balsamic glaze
