Brown Rice Salad
SALAD INGREDIENTS:
2 cups cooked brown rice
1 large red bell pepper, diced
3 spring onions, finely sliced or 1 small red onion, finely diced
2 cups baby spinach, sliced
1 cup frozen green peas, defrosted and water drained off
One handful of roasted unsalted sunflower seeds
Small handful of cilantro, finely sliced
Himalayan pink salt, crushed black pepper and garlic and herb salt to taste
1 diced avocado, optional
Fresh lemon juice, optional
DRESSING INGREDIENTS:
3 Tbsp extra virgin olive oil
2 Tbsp raw apple cider vinegar
1 Tbsp maple syrup
1 clove garlic
A dash of dijon mustard, optional
METHOD:
Combine all salad ingredients in salad bowl
Beat together dressing ingredients in a mini blender until smooth
Pour dressing over salad
