Butterbean Salad
Ingredients
1 can butterbeans, rinsed and drained
1 small red pepper, diced
1 small orange pepper, diced
1 small red onion, peeled and diced
1 avocado, peeled and diced
2 garlic cloves, peeled and crushed
1 1/2 teaspoons ground cumin
3 Tablespoons extra virgin olive oil
1 medium lemon, juiced
1 large handful of rocket/arugula
1 large handful of spring mix lettuce
1 large handful of parsley, finely chopped
Putting it All Together
Arrange all the greens on a salad platter and set the avocado on one side.
Add all the remaining ingredients to another bowl and mix well making sure the dressing coats the beans and vegetables.
Add the veggies and beans on top of the bed of greens.
Top with the diced avocado and season with a bit of pink salt, a squeeze of fresh lemon, garlic, and herb spice, and a few cracks of black pepper.
Also- you can swap out the avocado for 1 cup of plant-based feta cheese of choice
