Canned Apples
INGREDIENTS:
6 cooking apples, peeled, cored and sliced
1/4 xylitol and 1/4 cup brown sugar
6 cups water
1 vanilla pod
1 cinnamon stick
1 lemon
1 slice of ginger
METHOD:
In a large saucepan, dissolve the xylitol and sugar in the water
Bring to a simmer and add vanilla seeds from pod and cinnamon stick
Simmer for 30 minutes
Peel, core, and slice apples into eighths
Cover the apples with cold water in a glass container and add a large squeeze of lemon
Add apples to syrup and allow to poach for 5-10 minutes
Pack apples loosely into sterilized jars
Bring the syrup back to the boil for 10 minutes
Carefully press the cinnamon stick, vanilla pod and slice of ginger in between apples
Pour the boiled syrup over to cover the fruit
Allow to cool in the jar before sealing
Refrigerate once opened
