Chickpea Tabbouleh Salad
Ingredients:
1 can chickpeas, rinsed
1 can lentils, rinsed
2 large tomatoes, diced
1 cucumber, peeled, finely diced
2 cups fresh parsley, finely chopped
½ cup fresh mint, finely chopped
8 spring onions, finely sliced or 1 small red onion, peeled, finely diced
Add all the ingredients to a salad bowl.
Dressing
4 Tablespoons extra virgin olive oil
1 Tablespoon raw honey or maple syrup
5 Tablespoons fresh lemon juice
¼ teaspoon pink salt
¼ teaspoon black pepper
1 garlic clove, peeled and crushed or
1/8 teaspoon garlic powder or 1 garlic clove, crushed
Optional: 1 cup of crumbed feta cheese or plant-based feta cheese
Method
Mix all the ingredients together and pour over the salad.
Using salad tongs, lightly toss all the ingredients together and serve.
