SALAD INGREDIENTS:

  • 3 cups white or tri-colored quinoa (cooked and cooled)

  • 1/2 cup black-eyed peas (cooked and cooled)

  • 1/2 cup green peas

  • 1/2 cup shelled edamarme (steamed and cooled)

  • 3 Tbsp finely chopped red onion

  • 1 yellow pepper, diced

  • 1 orange pepper, diced

  • 1/2 cucumber, diced

  • 1 stick celery, diced

  • 1 handful fresh flat-leaf parsley, chopped

  • 1 avocado, optional

DRESSING INGREDIENTS:

  • Freshly squeezed juice of 1 orange

  • Freshly squeezed juice of 1/2 lemon

  • 1 Tbsp EVOO (Extra virgin olive oil)

  • Garlic and herb salt

  • Himalayan salt

  • Freshly ground black pepper

METHOD:

  1. Combine all salad ingredients in a large salad bowl

  2. Mix together dressing ingredients

  3. Pour dressing over salad and mix well
