High-Protein Quinoa Salad
SALAD INGREDIENTS:
3 cups white or tri-colored quinoa (cooked and cooled)
1/2 cup black-eyed peas (cooked and cooled)
1/2 cup green peas
1/2 cup shelled edamarme (steamed and cooled)
3 Tbsp finely chopped red onion
1 yellow pepper, diced
1 orange pepper, diced
1/2 cucumber, diced
1 stick celery, diced
1 handful fresh flat-leaf parsley, chopped
1 avocado, optional
DRESSING INGREDIENTS:
Freshly squeezed juice of 1 orange
Freshly squeezed juice of 1/2 lemon
1 Tbsp EVOO (Extra virgin olive oil)
Garlic and herb salt
Himalayan salt
Freshly ground black pepper
METHOD:
Combine all salad ingredients in a large salad bowl
Mix together dressing ingredients
Pour dressing over salad and mix well
