Kale, Avocado, & Pea Salad
INGREDIENTS:
2 cups sliced kale
1 tbsp olive oil
1 tbsp apple cider vinegar or fresh lemon juice
1 cup spinach, finely sliced
1 cup thawed frozen peas or
2-3 avocados, diced
1 red bell pepper, diced
1/2 red onion, finely diced
1/2 cup olives, sliced
METHOD:
Add 1 tablespoon of olive oil and 1 tablespoon of apple cider vinegar/fresh lemon juice to kale
Massage for 5 minutes
Combine with rest of ingredients
Squeeze lemon juice over the salad
Season with garlic and herb salt and coarsely ground black pepper
