Lemony Tahini Dressing

Ingredients:

1/3 cup runny tahini

1 medium lemon, juiced and the zest of half a lemon

2 Tablespoons maple syrup

Pinch of pink Himalayan salt

1 garlic clove, zested or finely crushed

6-8 Tablespoons water to thin it

A few cracks of black pepper

A sprinkle of paprika

2 teaspoons fresh parsley minced (optional)


Method:

Mix all the ingredients thoroughly with a whisk until smooth.

Want it more lemony? Add more lemon juice.

Want the consistency thinner? Add more water.
