Quinoa, Butternut, & Pumpkin Seed Salad
SALAD INGREDIENTS:
1 small red onion, diced
2 cups quinoa, cooked
1 English cucumber, diced or 1 regular cucumber
2 cups roasted butter squash, cubed
2 red bell peppers, diced
1 yellow pepper, diced
2 tomatoes, de-seeded and cubed
2 avocados, diced
2 cups spring mix, broken into pieces
1 cup baby spinach, sliced
8 fresh basil leaves, snipped
1 handful of fresh parsley, snipped
A handful of raw pumpkin seeds
SALAD METHOD:
Set aside pumpkin seeds
Combine all other ingredients
Sprinkle pumpkin seeds on top
DRESSING INGREDIENTS:
2 tbsp cold-pressed olive oil
2 tbsp fresh lemon juice
1 tbsp Dijon mustard
Thumb nail size ginger, zested
1/2 garlic clove, zested
DRESSING METHOD:
Mix ingredients together until well blended
Pour over the salad and lightly mix through pumpkin seeds
