Quinoa, Butternut, & Pumpkin Seed Salad

Quinoa, Butternut, & Pumpkin Seed Salad.png

SALAD INGREDIENTS:

  • 1 small red onion, diced

  • 2 cups quinoa, cooked

  • 1 English cucumber, diced or 1 regular cucumber

  • 2 cups roasted butter squash, cubed

  • 2 red bell peppers, diced

  • 1 yellow pepper, diced

  • 2 tomatoes, de-seeded and cubed

  • 2 avocados, diced

  • 2 cups spring mix, broken into pieces

  • 1 cup baby spinach, sliced

  • 8 fresh basil leaves, snipped

  • 1 handful of fresh parsley, snipped

  • A handful of raw pumpkin seeds

SALAD METHOD:

  1. Set aside pumpkin seeds

  2. Combine all other ingredients

  3. Sprinkle pumpkin seeds on top


DRESSING INGREDIENTS:

  • 2 tbsp cold-pressed olive oil

  • 2 tbsp fresh lemon juice

  • 1 tbsp Dijon mustard

  • Thumb nail size ginger, zested

  • 1/2 garlic clove, zested

DRESSING METHOD:

  1. Mix ingredients together until well blended

  2. Pour over the salad and lightly mix through pumpkin seeds
