Quinoa Stuffed Cucumbers
INGREDIENTS:
2 regular cucumbers or 1 large English cucumber (peeled and de-seeded)
6 tbsp cooked quinoa
4 tbsp grated carrots
2 tbsp red bell pepper, diced
6 tbsp hummus, regular or with olives or pinenuts
6 tbsp tomatoes, diced
2 fresh basil leaves snipped
METHOD:
Mix all the ingredients together
Stuff mixture inside the cucumbers
Slice and serve on spring greens
If desired, cut the smaller cucumbers in half and eat burrito style
