Quinoa Stuffed Cucumbers

INGREDIENTS:

  • 2 regular cucumbers or 1 large English cucumber (peeled and de-seeded)

  • 6 tbsp cooked quinoa

  • 4 tbsp grated carrots

  • 2 tbsp red bell pepper, diced

  • 6 tbsp hummus, regular or with olives or pinenuts

  • 6 tbsp tomatoes, diced

  • 2 fresh basil leaves snipped

METHOD:

  1. Mix all the ingredients together

  2. Stuff mixture inside the cucumbers

  3. Slice and serve on spring greens

  4. If desired, cut the smaller cucumbers in half and eat burrito style
