Red Lentil & Kale Soup
INGREDIENTS:
1 white onion, diced
2 carrots, diced
2 celery sticks, diced
2 garlic cloves, sliced
1 Tbsp coconut or olive oil
1 & 1/2 cups red lentils, rinsed
5 cups of vegetable broth
1 tsp yellow curry powder
Himalayan salt and coarsely ground black pepper to taste
1 heaped cup kale, finely sliced
1 can coconut milk, BPA Free
METHOD:
Fry the onion, carrots, celery and garlic in a soup pot in oil for 5 minutes
Add curry powder and sauté for another 2 minutes stirring well
Add vegetable broth and lentils
Bring to a low boil
Cover with lid and cook for 20 minutes or until the lentils are tender
Add coconut milk and sliced kale
Season to taste and simmer for another 5-10 minutes
Serve garnished with a sprig of fresh cilantro or flat-leafed parsley
