Red Pepper Sauce
Ingredients:
3 large red bell peppers, seeds removed
Juice of ½ lemon
2 Tablespoons cold-pressed olive oil
2 Tablespoons vegan mayonnaise OR 1 teaspoon Sriracha sauce (if you like a little heat)
1/8 tsp red pepper flakes if using mayonnaise instead of sriracha sauce - optional
2 garlic cloves, peeled and crushed
1 -2 Tablespoon nutritional yeast
¼ teaspoon black pepper
½ teaspoon pink salt
Method:
Chop the peppers coarsely and place in a small pot with a splash of water and the salt. Cover with a lid and over medium heat, simmer in their own juices for about 10 – 15 minutes watching that they don’t burn. Drain well. Add the peppers and the remaining ingredients to a blender and blend until smooth.
*The peppers can also be oven roasted instead of being cooked on the stove top.
