Summer Salsa
INGREDIENTS:
3 cups fresh papaya, peach or mango, sliced, peeled and diced
1 red bell pepper, diced
1 cup red onion, diced
1 cup cilantro, finely chopped
1 cup tomato, diced
1/2 jalapeño pepper, finely diced
2 tsp cumin
1 tsp black pepper
2 tbsp cold-pressed olive or avocado oil
2 tbsp red wine vinegar
6 tbsp fresh lime juice
2 tbsp fresh lemon juice
METHOD:
Mix the first six ingredients in a bowl
Combine the cumin, black pepper, and liquid ingredients together
Mix well then add to the rest of the ingredients
Serve with organic tortilla chips
