Summer Salsa

INGREDIENTS:

  • 3 cups fresh papaya, peach or mango, sliced, peeled and diced

  • 1 red bell pepper, diced

  • 1 cup red onion, diced

  • 1 cup cilantro, finely chopped

  • 1 cup tomato, diced

  • 1/2 jalapeño pepper, finely diced

  • 2 tsp cumin

  • 1 tsp black pepper

  • 2 tbsp cold-pressed olive or avocado oil

  • 2 tbsp red wine vinegar

  • 6 tbsp fresh lime juice

  • 2 tbsp fresh lemon juice

METHOD:

  1. Mix the first six ingredients in a bowl

  2. Combine the cumin, black pepper, and liquid ingredients together

  3. Mix well then add to the rest of the ingredients

  4. Serve with organic tortilla chips
