Fig and Sweet Potato Salad

This delicious side dish/salad is bursting with flavors!

Ingredients:

  • 3 medium sweet potatoes, chopped

  • 1 cup goat or feta cheese, crumbled

  • 8 spring onions, saute´

  • 2 garlic cloves, chopped

  • 1 red chili, sliced thin and most seeds removed

  • 2-3 Tbsp avocado oil

  • 4 figs, cut in quarters

  • 1/2 cup parsley, finely chopped

  • 1/2 of a fresh lime

  • Balsamic glaze to taste

Putting it Together:

  1. Oven roast sweet potatoes until cooked through

  2. Crumble about a cup of cheese (goat or feta) onto the sweet potatoes

  3. Sauté 8 spring onions, 2 garlic cloves, and a sliced red chili (Most seeds removed), in 2-3 tablespoons avocado oil. 

  4. Pour saute´ mixture over the sweet potatoes and cheese, arrange figs over everything, and sprinkle 1/2 a cup of finely chopped parsley, a large squeeze of fresh lime, and a drizzle of balsamic glaze
