Lemon and Herb Potato Salad

Lemon and Herb Potato Salad

Ingredients:

1 pound or 500 g baby potatoes - steamed until soft
6 spring onions, roots and tops removed and finely sliced
1/2 cup parsley, finely chopped

Dressing

3 Tablespoons olive oil
2 cloves garlic, peeled and finely grated
Zest and juice of half a lemon
1/2 teaspoon of Dijon mustard
Real salt or pink Himalayan salt to taste

Method:

Mix the dressing ingredients together until smooth.

Add to the warm potatoes along with the parsley.

Stir lightly until well combined.

Sprinkle with 1/2 teaspoon of paprika and enjoy.
