Mediterranean Salad
Ingredients:
1 yellow pepper, de-seeded, finely diced
1 orange pepper, de-seeded, finely diced
1 medium red onion, peeled and finely diced
1 pound of cherry tomatoes, cut in half
1 cup chickpeas, cooked
1 clove garlic, finely diced
1/4 cup parsley roughly diced
1/4 cup cilantro with the stem, roughly diced
2 Tablespoons olive oil
2 Tablespoons fresh lemon juice
Salt and freshly crushed black pepper to taste
Garlic and herb salt to taste
Method:
Place all the ingredients into a large mixing bowl and mix it together with two wooden spoons. Add salt and pepper to taste.
Arrange on a serving platter or in a bowl and serve.
