Festive Chocolate Squares
Ingredients
250g dark chocolate ~ I prefer Lily’s, broken into pieces
1 Tablespoon coconut oil
1 packet coconut cashew crisps or 100g of any other coconut cookie of choice ~ roughly broken
1/2 cup chopped Medjool dates
1/2 cup dried cranberries
1/2 cup roasted, salted pistachios
1/2 cup roasted, salted almonds, roughly chopped or raw walnuts
Putting it All Together
Line the bottom of an 8x8 cm dish with parchment paper. Leave an overhang on either side so you can lift it out of the dish easily.
Melt chocolate and coconut oil over a bowl of water that is simmering slightly.
Once melted, remove chocolate from stove and add rest of ingredients. Stir until well mixed.
Add it to the lined dish. Using your fingers, press it into the dish until evenly spread.
Cover with foil and place in the fridge overnight or for at least an hour.
Lift the parchment paper out of the dish onto a wooden board and cut it into squares. Enjoy!
