Winter Fruit Salad

This fruit salad is the perfect accompaniment to your Christmas morning brunch!

Ingredients

  • 1 naval orange, peeled, diced, remove pith

  • 1 red grapefruit peeled, diced, remove pith

  • 2 persimmons, peeled and diced

  • 1 pear, peeled, de-seeded, diced

  • The arils of 1 pomegranate

  • 2 mandarins, peeled, diced

  • 8 fresh mint leaves

  • A generous squeeze of fresh lemon

  • The juice of 1 orange

Putting it All Together

  1. Add all the ingredients to a bowl, mix well and serve with your favorite plain, Greek yogurt of choice. I love coconut milk Greek yogurt.

  2. To serve, top the fruit salad with more pomegranate arils, pecans or walnuts, and a sprig of fresh mint. Enjoy!
