INGREDIENTS:

  • 3 cups seasonal veggies

  • 1 cup feta or organic white cheddar cheese or 1/2 cup honeyed goats cheese (broken into pieces)

  • 1 cup almond milk or organic cream

  • 4 large, organic eggs

  • Herbal salt & crushed black pepper to taste

METHOD:

  1. Oven bake veggies at 400 F for 20 minutes

  2. Place veggies in a greased baking dish and add cheese

  3. Beat the eggs, cream/almond milk, herbal salt, and black pepper together

  4. Pour over cheese and veggie mixture and mix well.

  5. Bake at 350 F for 20–30 minutes or until firm and golden brown
