Oven-Baked Butternut Squash
INGREDIENTS:
1 large or 2 medium butternut squash, peeled and sliced
2 cinnamon sticks or 3 pieces of cinnamon bark
Knob of ginger, peeled and grated
Himalayan salt and crushed black pepper to taste
1 large navel orange, sliced
Dash of maple syrup, optional
METHOD:
Set oven at 350 F
Arrange the butternut squash on a baking tray and dot with coconut oil or vegetable broth
Arrange cinnamon sticks and orange slices and sprinkle with a little cinnamon
Season with salt, crushed black pepper, and maple syrup
Oven roast until soft and starts to caramelize
Garnish with thyme and 1/2 cup of roasted pecans
