Oven-Baked Butternut Squash

INGREDIENTS:

  • 1 large or 2 medium butternut squash, peeled and sliced

  • 2 cinnamon sticks or 3 pieces of cinnamon bark

  • Knob of ginger, peeled and grated

  • Himalayan salt and crushed black pepper to taste

  • 1 large navel orange, sliced

  • Dash of maple syrup, optional

METHOD:

  1. Set oven at 350 F

  2. Arrange the butternut squash on a baking tray and dot with coconut oil or vegetable broth

  3. Arrange cinnamon sticks and orange slices and sprinkle with a little cinnamon

  4. Season with salt, crushed black pepper, and maple syrup

  5. Oven roast until soft and starts to caramelize

  6. Garnish with thyme and 1/2 cup of roasted pecans
