Fresh Lettuce Wraps with Thai Satay Sauce
LETTUCE WRAP INGREDIENTS:
2 cups red cabbage, finely sliced or shredded
2 carrots, grated
1 cucumber, finely cubed
1/2 jicama, grated
1 red bell pepper, diced
1 large tomato, seeds removed and diced
1/2 cup snap peas
1 avocado, cubed and drizzled with fresh lemon juice, optional
1/8 cup red onion, finely diced, optional
LETTUCE WRAP METHOD:
Mix all the ingredients together in a salad bowl
Spoon into romaine lettuce leaves
Drizzle with Satay Sauce
THAI SATAY SAUCE INGREDIENTS:
1/2 cup raw almond butter
1/2 cup apple cider vinegar
1/2 cup maple syrup
1/8 cup Bragg’s liquid aminos, low sodium tamari or coconut aminos
2-4 tsp hot sauce
THAI SATAY SAUCE METHOD:
Whisk all ingredients together
Add pepper if needed
Serve over lettuce wraps
