LETTUCE WRAP INGREDIENTS:

  • 2 cups red cabbage, finely sliced or shredded

  • 2 carrots, grated

  • 1 cucumber, finely cubed

  • 1/2 jicama, grated

  • 1 red bell pepper, diced

  • 1 large tomato, seeds removed and diced

  • 1/2 cup snap peas

  • 1 avocado, cubed and drizzled with fresh lemon juice, optional

  • 1/8 cup red onion, finely diced, optional

LETTUCE WRAP METHOD:

  1. Mix all the ingredients together in a salad bowl

  2. Spoon into romaine lettuce leaves

  3. Drizzle with Satay Sauce


THAI SATAY SAUCE INGREDIENTS:

  • 1/2 cup raw almond butter

  • 1/2 cup apple cider vinegar

  • 1/2 cup maple syrup

  • 1/8 cup Bragg’s liquid aminos, low sodium tamari or coconut aminos

  • 2-4 tsp hot sauce

THAI SATAY SAUCE METHOD:

  1. Whisk all ingredients together

  2. Add pepper if needed

  3. Serve over lettuce wraps
