Quinoa with Stir-Fried Vegetables
INGREDIENTS:
1 cup quinoa, cooked
5 tablespoons coconut oil or vegetable broth
1 red onion, halved and sliced
2 cloves garlic, crushed
1 small orange bell pepper, sliced
1 small red bell pepper, sliced
3 zucchinis cut into long strips
1/2 cup snow peas
1 cup red cabbage, shredded
1/4 cup raw cashew nuts, chopped
1 tablespoon coconut nectar or honey
3 tablespoons Bragg liquid aminos or nama shoyu
1 tablespoon chia seeds
METHOD:
Cook quinoa
Heat the oil or broth in a wok or large frying pan
Add the onions and garlic and fry for 30 seconds
Add the peppers, zucchinis and snow peas and fry for 1 minute
Add the cabbage, nuts, honey and bragg liquid aminos/nama shoyu and fry until cabbage is wilted
Serve on a bed of quinoa and sprinkle with chia seeds
