Quinoa with Stir-Fried Vegetables

INGREDIENTS:

  • 1 cup quinoa, cooked

  • 5 tablespoons coconut oil or vegetable broth

  • 1 red onion, halved and sliced

  • 2 cloves garlic, crushed

  • 1 small orange bell pepper, sliced

  • 1 small red bell pepper, sliced

  • 3 zucchinis cut into long strips

  • 1/2 cup snow peas

  • 1 cup red cabbage, shredded

  • 1/4 cup raw cashew nuts, chopped

  • 1 tablespoon coconut nectar or honey

  • 3 tablespoons Bragg liquid aminos or nama shoyu

  • 1 tablespoon chia seeds

METHOD:

  1. Cook quinoa

  2. Heat the oil or broth in a wok or large frying pan

  3. Add the onions and garlic and fry for 30 seconds

  4. Add the peppers, zucchinis and snow peas and fry for 1 minute

  5. Add the cabbage, nuts, honey and bragg liquid aminos/nama shoyu and fry until cabbage is wilted

  6. Serve on a bed of quinoa and sprinkle with chia seeds
