Colorful Bean Salad
SALAD INGREDIENTS:
1 can chickpeas, BPA free, drained and rinsed or 1 1/2 cups cooked
1 can red kidney beans, BPA free, erained and rinsed or 1 & 1/2 cups cooked
2 cups peas, if frozen leave to defrost
1 small punnet baby tomatoes, halved
1/4 cup black olives, halved
1/4 cup green olives, halved
2 spring onions, sliced or 1 small red onion, finely diced
1 handful of fresh basil leaves, torn
1 yellow bell pepper, diced
1 garlic clove, crushed
1 avocado, diced, optional
DRESSING INGREDIENTS:
70 ml cold pressed olive oil
30 ml fresh lemon juice
2 tbsp honey or maple syrup
1/2 tsp djon mustard
1 garlic clove, minced
1 tbsp raw apple cider vinegar
METHOD:
Mix all dressing ingredients in a small glass jar
Shake until well combined
Pour dressing over salad and serve on a bed of greens
