SALAD INGREDIENTS:

  • 1 can chickpeas, BPA free, drained and rinsed or 1 1/2 cups cooked

  • 1 can red kidney beans, BPA free, erained and rinsed or 1 & 1/2 cups cooked

  • 2 cups peas, if frozen leave to defrost

  • 1 small punnet baby tomatoes, halved

  • 1/4 cup black olives, halved

  • 1/4 cup green olives, halved

  • 2 spring onions, sliced or 1 small red onion, finely diced

  • 1 handful of fresh basil leaves, torn

  • 1 yellow bell pepper, diced

  • 1 garlic clove, crushed

  • 1 avocado, diced, optional

DRESSING INGREDIENTS:

  • 70 ml cold pressed olive oil

  • 30 ml fresh lemon juice

  • 2 tbsp honey or maple syrup

  • 1/2 tsp djon mustard

  • 1 garlic clove, minced

  • 1 tbsp raw apple cider vinegar

METHOD:

  1. Mix all dressing ingredients in a small glass jar

  2. Shake until well combined

  3. Pour dressing over salad and serve on a bed of greens
