Fall Kale Salad
SALAD INGREDIENTS:
2 bunches fresh kale, sliced, de-stemmed
2 apples, winesap or granny smith
1 cup cranberries
4 oz honey goats cheese or 1 avocado
1 yellow or orange bell pepper, diced
DRESSING INGREDIENTS:
3 tbsp olive oil
2 tbsp apple cider vinegar
1/2 tsp dijon mustard
2 tsp honey or maple syrup.
1/2 tsp himalayan salt
Freshly ground black pepper
Generous squeeze of fresh lemon
1 cup cubed butternut squash, oven roasted, optional
METHOD:
Mix dressing ingredients together until smooth and pour over kale
Massage dressing into kale for 4-5 minutes
Add other salad ingredients and season to taste
