Go Green Salad
SALAD INGREDIENTS:
2 granny smith or golden delicious apples
1 cup broccoli
1 cup green beans
1 cup mange tout/flat green peas
1 small avocado, diced
1/2 cup chickpeas/garbanzo beans
1 handful of arugula/rocket
DRESSING INGREDIENTS:
1/2 cup fat-free Greek yogurt or coconut milk Kefir if dairy intolerant
2 tbsp olive oil
2 tbsp white balsamic vinegar
METHOD:
Toss all the salad ingredients together
Mix together the dressing ingredients
Pour dressing over salad and serve
