Quick Quinoa Salad
INGREDIENTS:
3 cups cooked quinoa
1 red pepper, seeded and chopped into blocks
1 orange pepper, seeded and chopped into blocks
1/2 cup steamed edamame
1/2 cup chick peas or garbanzo beans
1 cup sugar snap peas - cut into pieces
1/4 cup fresh basil - snipped with scissors
1/4 cup sundried tomatoes
2 avocados - cubed
1/4 cup chopped red onion or 3 spring onions, optional
2 tomatoes, cubed
METHOD:
Mix together all the ingredients but the avocado
Chop the avocado and pile in the middle of salad
Squeeze the juice of 1 small lemon and 1 small lime
Add herbal salt/garlic and herb salt, and black pepper to taste
Mix through and serve on a bed of greens
