Kale Salad

SALAD INGREDIENTS:

  • 5oz baby kale or regular kale - snipped

  • 1 handful of flat leaf parsley - snipped

  • 4 tsp finely chopped red onion

  • 2 cups fresh blueberries

  • 1 cup shelled edamarme - steamed and cooled

  • 1 small punnet baby tomatoes - cut in half

  • 1/4 cup raw sunflower seeds

  • 1/2 cup raw cashew nuts - cut or broken in half

  • 1 grated carrot

  • 1 avocado cubed

  • 1/4 cup raisins, optional

SALAD METHOD:

  1. If using regular kale pour 1 Tablespoon of cold-pressed olive oil over

  2. Massage for 2-3 minutes

  3. Add the rest of the ingredients and toss well


DRESSING 1 INGREDIENTS:

  • 1/2 lemon

  • 1/2 lime

  • Veggie stock power or garlic and herb salt

  • Himalayan pink salt

DRESSING 1 METHOD:

  1. Squeeze ½ lemon and ½ lime over the salad

  2. Season with veggie stock powder/garlic and herb salt

  3. Add a little Himalayan pink salt


DRESSING 2 INGREDIENTS:

  • 1/4 cup cold-pressed olive oil

  • Zest and juice of a small lemon

  • Juice of half an orange

  • 2 tsp fresh ginger – finely grated

  • 1 clove garlic – grated with a zester

  • 1/2 tsp Himalayan salt

  • 3 tbsp raw honey

DRESSING 2 METHOD:

  1. Shake all the ingredients together in a jar or blend in blender

  2. Pour over kale salad
