SALAD INGREDIENTS:

  • 1 small bunch of kale, de-stalked and finely chopped

  • 2 sweet potatoes or 1 medium sized butternut squash, peeled and diced

  • 2 tbsp coconut oil

  • Himalayan salt and crushed black pepper to taste

  • 2 & 1/2 cups cooked quinoa

  • 1 small red onion, finely diced

  • 1/4 cup roasted sunflower seeds

  • 1/4 cup raw pumpkin seeds

  • A generous pinch of cranberries

SALAD DRESSING INGREDIENTS:

  • 3 tbsp cold-pressed olive oil

  • 1 clove garlic

  • 1 tsp Bragg liquid aminos

  • 2 tbsp raw apple cider vinegar

METHOD:

  1. Mix all ingredients except kale and potatoes in a NutriBullet or mix well with a whisk

  2. Set oven at 350 F

  3. Roast sweet potatoes in coconut oil/vegetable broth for 20–30 minutes or until soft

  4. Add salad dressing to chopped kale and massage for 5 minutes

  5. Once sweet potato has cooled, add to the kale along with all the other ingredients

  6. Mix with salad tongs and season
