Sweet Potato, Kale, & Quinoa Salad
SALAD INGREDIENTS:
1 small bunch of kale, de-stalked and finely chopped
2 sweet potatoes or 1 medium sized butternut squash, peeled and diced
2 tbsp coconut oil
Himalayan salt and crushed black pepper to taste
2 & 1/2 cups cooked quinoa
1 small red onion, finely diced
1/4 cup roasted sunflower seeds
1/4 cup raw pumpkin seeds
A generous pinch of cranberries
SALAD DRESSING INGREDIENTS:
3 tbsp cold-pressed olive oil
1 clove garlic
1 tsp Bragg liquid aminos
2 tbsp raw apple cider vinegar
METHOD:
Mix all ingredients except kale and potatoes in a NutriBullet or mix well with a whisk
Set oven at 350 F
Roast sweet potatoes in coconut oil/vegetable broth for 20–30 minutes or until soft
Add salad dressing to chopped kale and massage for 5 minutes
Once sweet potato has cooled, add to the kale along with all the other ingredients
Mix with salad tongs and season
