Pumpkin Date Balls
INGREDIENTS:
1 slighted heaped cup medjool dates - de-stoned
1 cup Bob’s Red Mill gluten free oats
1/2 cup unsweetened, shredded coconut
1/2 cup walnuts, pecans or almonds, slightly toasted and roughly chopped
Heaped 1/4 cup cooked pumpkin purée
1 tsp vanilla extract
2 1/4 tsp pumpkin spice
1 scoop AIM Propeas protein powder, optional
The zested rind of a small organic orange, optional
METHOD:
Soak dates in boiling water for 5 minutes, discard water
Add dates to a food processor and blend until smooth
Add rest of ingredients and pulse until a dough-like consistency is formed (mixture most not be too smooth)
Roll into balls
Roll in toasted coconut or toasted, finely chopped pecans or walnuts
Add to a sealed container and store in fridge until cold
