Pumpkin Date Balls

INGREDIENTS:

  • 1 slighted heaped cup medjool dates - de-stoned 

  • 1 cup Bob’s Red Mill gluten free oats

  • 1/2 cup unsweetened, shredded coconut 

  • 1/2 cup walnuts, pecans or almonds, slightly toasted and roughly chopped

  • Heaped 1/4 cup cooked pumpkin purée 

  • 1 tsp vanilla extract 

  • 2 1/4 tsp pumpkin spice

  • 1 scoop AIM Propeas protein powder, optional

  • The zested rind of a small organic orange, optional

METHOD:

  1. Soak dates in boiling water for 5 minutes, discard water

  2. Add dates to a food processor and blend until smooth

  3. Add rest of ingredients and pulse until a dough-like consistency is formed (mixture most not be too smooth)

  4. Roll into balls

  5. Roll in toasted coconut or toasted, finely chopped pecans or walnuts

  6. Add to a sealed container and store in fridge until cold
