Quinoa with Toasted Almonds & Cranberries
INGREDIENTS:
1 cup quinoa (Red or white - or a mixture of the two)
1/2 cup sliced almonds
1 & 1/2 cups vegetable broth/stock
1/2 tsp salt
1 cinnamon stick
1 bay leaf
1/2 cups dried cranberries
METHOD:
Soak quinoa for 30 minutes
Rinse with cold water
Over medium heat, toast sliced almonds
Add nuts and cranberries to quinoa
Add the veggie broth to the mixture with salt, bay leaf, and cinnamon stick
Bring to boil and simmer for 20 minutes
Remove from heat and allow to stand for 5 minutes before serving
