Seeded Caramel Popcorn Balls
INGREDIENTS:
8 cups air popped popcorn
1 cup raw almonds, finely chopped or raw cashew chips
1 cup raw sunflower seeds
1 tbsp chia seeds
1 tbsp sesame seeds
1 cup raw honey
1 tbsp fresh lemon juice
1 tbsp coconut oil
1/2 tsp Himalayan salt
METHOD:
Combine the popcorn, nuts, sunflower seeds, chia seeds and sesame seeds
Combine remaining ingredients in a saucepan and heat over low heat until well combined
Stir and pour over popcorn mixture, tossing to coat completely
Bake at 350 F 15 minutes
Remove from oven and roll into balls
